Mumbai !!! The first thing this word relates to is Bollywood and the second.. undoubtedly its Street Food. Vada Pav, Pav Bhaji, Bhel Puri are the most famous Street Food from Mumbai. Since decades, Vada Pav has served and still continues to serve as the Staple Food for those people who unfortunately don’t earn enough to feed their families. Also, not just Mumbai but Vada Pav is one of the go to food in the state of Maharashtra. As the taste of the food changes every 100 miles in India and Vada Pav is not an exception to this. We can say – its recipe was born in Mumbai and have flourished in the rest of the state with so many different variations in taste. Vada Pav is itself an Indian Burger. It is very popular Maharashtrian dish made up of spicy Potato filling coated with Gram Flour and then deep-fried. This Potato stuffing is then sandwiched between the slices of Tamarind Chutney and hot and spicy Garlic Chutney in Pav (Bread Bun). Served with fried Green Chillies and spicy Garlic Chutney.

For Coriander Paste Quantity
Fresh Coriander Leaves 1 cup
Green Chillies 2 medium sized
Garlic Cloves 5 to 6 nos
Salt ¼ tsp
Curd / Yogurt / Dahi 1 tsp
For Roasted Green Chillies Quantity
Oil 1 tablespoon
Green Chillies 5 to 7 nos
Salt ¼ tsp
For Vada Batter Quantity
Gram Flour / Besan ¾ cup
Turmeric Powder / Haldi ½ tsp
Red Chilli Powder / Lal Mirchi ¼ tsp
Salt ½ tsp
Lemon Juice ½ tsp
Water as required
Other Ingredients Quantity
Baked Pav 12 nos
Boiled and Mashed Potatoes 2 cup
Coriander Leaves ¼ cup
Oil 1 tablespoon
Mustard Seeds / Rai ½ tsp
Cumin Seeds / Jeera ½ tsp
Asafetida / Hing ¼ tsp
Curry Leaves 6 to 8 nos
Coriander Seeds / Dhaniya ½ tsp
Grated Ginger ½ tsp
Salt ½ tsp
Turmeric Powder / Haldi ½ tsp
Oil to deep-fry as required
Tamarind Chutney / Imli as required
Vada Pav Garlic Chutney as required

# Cooking Vada Pav | Step by Step
1 In a mixer grinder, add 1 cup of fresh and washed Coriander Leaves, 2 medium sized Green Chillies, 5 to 6 nos of Garlic Cloves, ¼ tsp of Salt, 1 tsp of Curd (Dahi), and grind into fine paste and keep aside.
2 In a heating pan, take 1 tablespoon of Oil, 5 to 7 small Green Chillies, roast on medium flame for 5 Min, once roasted remove it on Kitchen Towel, add ¼ tsp of Salt, mix well and keep aside.
3 Then in a same pan, take more 1 tablespoon of Oil and allow it heat nicely.
4 Then add ½ tsp of Mustard Seeds (Rai), ½ tsp of Cumin Seeds (Jeera), ¼ tsp of Asafetida (Hing), 6 to 8 Curry leaves, ½ tsp of Coriander Seeds, ½ tsp of grated Ginger, grinded Coriander Paste and sauté for 1 Min on medium flame.
5 Now add ¼ cup of chopped Coriander Leaves, ½ tsp of Salt, ½ tsp of Turmeric Powder (Haldi), mix well and keep aside.
6 In a larger mixing bowl, take 2 cup of boiled and mashed Potatoes, sautéed Green Chutney Paste, mix well and now the Vada stuffing is ready.
7 Take small portion of stuffing and start making small round ball shaped Vada and slightly flatten it.
8 Similar way make all the Vadas and keep aside and heat the Oil in a pan to deep fry the Vadas.
9 Now make the batter for Vada by taking a ¾-cup of Gram Flour (Besan) in a mixing bowl, ½ tsp of Turmeric Powder (Haldi), ¼ tsp of Red Chilli Powder, ½ tsp of Salt, ½ tsp of Lemon Juice and Water as required to make slightly thick consistency batter as shown in video.
10 Then take the small round stuffed Vadas, dip into the batter, coat nicely from both the sides and pour into preheated Oil one by one and deep fry on medium fry.
11 Stir occasionally and fry until golden brown.
12 When fried nicely, remove it on Kitchen Towel to remove access Oil and keep aside.
13 Furthermore, take one baked Pav, cut into half by making pocket shaped, add 1 tsp of Tamarind Chutney (Imli), 1 tsp of Vada Pav Garlic Chutney, keep the fried Vada and close the pocket.
14 Similar way make all the Vada Pav and serve with roasted Green Chillies.

Steps to Prepare Vada Pav

Useful Tips
– Do not make Batter too watery otherwise, it will not coat nicely to stuffing.
– If gets too Watery, add some more amount of Gram Flour (Besan) and mix.
– Adding Lemon Juice will not make the Vadas Oily.
– You can also add Green Chutney to Pav while making Vada Pav.
