Bottle Gourd (Lauki) is rich in Vitamins, Iron and Potassium. It also has low fat and cholesterol level. Lauki is very unusual vegetable, which is high in Water content. Today we are making a perfect and delicious Thepla using this Bottle Gourd (Lauki). Thepla, a Guajarati breakfast or snacks recipe to carry for travels and can be packed in lunch box. Thepla tastes yummy with Tea and Coffee. Lauki Thepla or Doodhi Thepla is an Indian flatbread that is served with Curd or Pickle and can have it for any meal of the day.
Lauki Thepla is easy recipe made with Whole Wheat flour and Bottle Gourd. Bottle Gourd (Lauki) is first peeled, then grated and mixed with Wheat flour. Then some Indian spices are added in the flour to form a soft dough. Once the dough is ready, you are all set to roll and cook the delicious and yummy Theplas in just minutes. If packing for lunch box or serving the next day roast the Thepla using Oil to keep them soft and moist while serving.

|Whole Wheat Flour / Atta||2 cup|
|Grated Bottle Gourd / Lauki||300 gm|
|Sesame Seeds / Til||1 tsp|
|Asafetida / Hing||1/4 tsp|
|Carom Seeds / Ajwain||1/4 tsp|
|Green Chilli Paste||1 tsp|
|Red Chilli Powder / Lal Mirchi||1/2 tsp|
|Turmeric Powder / Haldi||1/4 tsp|
|Curd / Yogurt / Dahi||3 tsp|
|Water||as required for Kneading|
|Oil||as required for Roasting|
|#||Cooking Lauki Thepla | Step by Step|
|1||In a large mixing bowl, add 2 cup of Whole Wheat flour (Atta) and 300 gm of grated Bottle Gourd (Lauki).|
|2||Now add 1 tsp of Sesame Seeds(Til), 1/4 tsp of Asafetida (Hing), 1/4 tsp of Carom Seeds (Ajwain), 1 tsp of Green Chilli Paste, 1/2 tsp of Red Chilli Powder (Lal Mirch), 1/4 tsp of Turmeric Powder (Haldi), 3 tsp of Curd (Dahi), 1 tsp of Salt, 3 tsp of Oil in a mixing bowl.|
|3||Mix it well and add Water as required to knead the soft dough.|
|4||Take small portion of the dough and start to roll into round five to six inch thin Thepla by dusting dry flour on the surface.|
|5||Now put the Thepla on preheated tawa and roast it with 2 tsp of Oil from both the sides on medium flame.|
|6||If required with the help of masher slightly press Thepla and roast from both the sides.|
|7||In a similar way, make all the Theplas and serve hot with Yogurt (Dahi) or Pickle.|

– If the dough gets little sticky and rolling has a problem it is good to add some amount of dry flour to the dough to make it soft and pliable.
