There are many variations of the Poha prepared by adding the vegetables of your choice and Aloo Poha is one of them. |Flattened Rice / Thick Poha||2 cup|
|Chopped Onions||¼ cup|
|Roasted Peanuts / Mungfali||¼ cup|
|Chopped Potatoes||½ cup|
|Chopped Green Chillies||1 tsp|
|Mustard Seeds / Rai||½ tsp|
|Cumin Seeds / Jeera||¼ tsp|
|Asafetida / Hing||¼ tsp|
|Turmeric Powder / Haldi||¼ tsp|
|Lemon Juice||1 tsp|
|Coriander Leaves||as required|
|Water for soaking||as required|
|#||Cooking Aloo Poha | Step by Step|
|1||In a mixing bowl take 2 cups of thick Poha (Flattened Rice) and wash thoroughly with Water for two times and strain the water completely with the help of sieve (chalni).|
|2||Then in the same mixing bowl take the soaked Poha add 1 tsp of Sugar and ½ tsp of Salt, mix well and keep aside.|
|3||In a heating pan take, 2 tablespoon of Oil and once the Oil is heated add ½ tsp of Mustard Seeds, ¼ tsp of Cumin Seeds and ¼ cup of chopped Onions and sauté the Onions for 1 Min.|
|4||Then add ¼ tsp of Hing followed by roasted Peanuts and stir until turns into golden color.|
|5||Add ½ cup of chopped Potatoes, ¼ tsp of Turmeric Powder, 1 tsp of chopped Green Chillies and ½ cup of Water, cover the lid, and simmer gas on low flame for 2 Min until Potatoes are cooked (check the Potato).|
|6||Add soaked Poha mixture and mix well.|
|7||Then add 1 tsp of Lemon juice and freshly chopped Coriander Leaves and give a nice mix.|
|8||Then cover the lid and simmer on low flame for more 2 Min.|
|9||Aloo Poha is now ready to serve hot.|

– Instead of roasted Peanuts you can add plain Peanuts but for that just add that in heating Oil before Onion and roast them first then followed by Onions.
– Do not over soak the Poha, as it turn mushy.
