Aloo Matar Sabzi

Aloo Matar is a Punjabi dish, which is made from Potatoes, and Green Peas in a spiced creamy Tomato based Sauce. It is a vegetarian dish. This recipe is made with minimal ingredients and yet taste good. Aloo Matar is very popular and all-time favorite Indian Veg Curry. It is a basic curry made with a base of Tomatoes and Onions, then spiced, and flavored with several Indian spices. This thick Tomato based gravy goes well with Rotis, Chapatis, Naan or Rice.

Aloo Matar is prepared by making the paste of Tomatoes with Ginger and Garlic. This paste is then cooked with Onions, Coriander Leaves, dry Fenugreek Leaves (Kasuri Methi) and other spices. Tempering of Fenugreek Leaves (Kasuri Methi) gives a new flavor and dimensions as compared to other traditional Punjabi curries. This Tomato based gravy is then cooked with Green Peas and Potatoes to give a tasty Punjabi Curry – Aloo Matar.

Ingredients Quantity
For Tomato Paste
Tomatoes 2 nos (roughly chopped)
Water 1/4 cup
Chopped Garlic 2 tsp
Chopped Ginger 1 tsp
Chopped Green Chillies 1 nos
Other Ingredients
Potatoes 2 nos (Chopped into Cubes)
Green Peas / Matar 1 cup
Water 1 cup
Chopped Onions 1/2 cup
Chopped Coriander Leaves 1/4 cup
Oil 2 tablespoon
Cumin Seeds / Jeera 1 tsp
Asafetida / Hing 1/4 tsp
Dry Fenugreek Leaves / Kasuri Methi 1 tsp
Red Chilli Powder / Lal Mirch 1 tsp
Turmeric Powder / Haldi 1/4 tsp
Garam Masala 1/4 tsp
Cumin Powder / Jeera 1/2 tsp
Salt 3/4 tsp

# Cooking Aloo Matar Sabzi | Step by Step
1 In a mixer grinder, take two roughly chopped Tomatoes, 2 tsp of chopped Garlic, 1 tsp of chopped Ginger, one chopped Green Chilli, 1/4 cup of Water and blend into the smooth paste.
2 In a heating pan, take 2 tablespoon of Oil to that add 1 tsp of Cumin Seeds (Jeera), 1/4 tsp of Asafetida (Hing), 1/2 cup of finely chopped Onions and sauté nicely for few minutes or just until Onion changes its color.
3 Now add 1 tsp of dry Fenugreek Leaves (Kasuri Methi) and roast Methi for 1 minute.
4 Furthermore, add 1 tsp of Red Chilli Powder (Lal Mirch), 1/4 tsp of Turmeric Powder (Haldi), 1/4 tsp of Garam Masala, 1/2 tsp of Cumin Powder (Jeera) and mix well.
5 Then add ¼ cup of freshly chopped Coriander Leaves and mix well.
6 Now add Tomato Paste, 3/4 tsp of Salt, give a nice stir, cover the lid, and simmer on medium flame for 5 Min.
7 After 5 Minutes, Oil separates from the gravy, now add 1 cup of Green Peas (Matar), two Potatoes cut into cubes, 1 cup of Water and mix well.
8 Cover the lid and cook for 8 to 10 Min. or until Potatoes are nicely cooked.
9 Aloo Matar Curry is now ready to serve with Roti, Chapati, Naan, or even Rice.
